The Team

A shared

Culinary Philosophy

Juan P. Ortiz leads the kitchen at María de la O. His training alongside some of Spain’s leading chefs, together with his connection to Granada’s culinary traditions, has shaped a personal approach to cooking in which the memory of flavour, an understanding of ingredients and creativity play a central role.

This philosophy comes to life through collaboration. Ideas, research and the refinement of each preparation are part of a shared process in which the team’s experience, judgement and dedication help shape the restaurant’s culinary identity.

In our kitchen, every recipe is also an opportunity to explore. We seek to understand what makes a flavour recognisable, discover new possibilities in each ingredient and transform preparations through knowledge and intuition. This continuous exploration defines the culinary personality of María de la O and the way we interpret Granada’s traditional recipes.

Great things are never achieved alone

At María de la O, we see gastronomy as a collective endeavour. The kitchen and front-of-house teams share the same philosophy, founded on respect for their craft, attention to detail and genuine care for every guest.

Solidarity, empathy and teamwork are essential values for us. Looking after the people who make up our team is also part of caring for every aspect of the restaurant experience.

["post-1426","page","type-page","status-publish","hentry

The Team -
