This new way of understanding cuisine involves conceiving and creating the sauce before the other elements of the dish, and has been noted by palates as demanding as those of the Repsol and Michelin Guides, who have recognised our work.

Acidic Cuisine
Located in a privileged area of Granada, María de la O is housed in a 19th century mansion.
During the last century, the family who lived in the mansion where we are based made vinegars for their own consumption in large barrels.
Nowadays, acidic cuisine is a fundamental pillar here at María de la O. This type of cooking focuses on pickles and marinades. For this ancient technique, which we normally use as a sauce rather than a preservation method, we produce our own vinegars.

Our Chef, born in Granada, couldn’t resist the opportunity to pay homage to our city in his dishes.

The Restaurant
The dining room has space for 20 diners and an adjoining room for 12 people, which can be converted into a special reserved area.
Our glassed-in, backlit wine cellar houses the winery, stocked with leading Spanish and international brands.
